If you want to stay completely wireless, hold the PS and Share buttons simultaneously until the light bar starts flashing blue. This is the indicator that the DualSense is in pairing mode. Then go back to your device's Bluetooth connection screen and click or tap Wireless Controller.
From now on, the controller will just use generic controller drivers to run. This may cause compatibility issues for some games while others will not have any issues.
